Basil Marinated Tomatoes
- 4 ripe plum tomatoes, cut into medium dice
- 8 to 10 large basil leaves, torn into small pieces
- 2 ounces (1/4 cup) really good quality extra-virgin olive oil
- juice of half a lemon
- salt, pepper, and crushed red pepper
Note: You can prepare the tomatoes up to six hours in advance. Any longer and they begin to break down from the salt.
- Combine everything in a bowl and let marinate for at least two hours.
- Before serving, drain some of the liquid, or else use a slotted spoon to serve.
