Eggplant Appetizer
- large eggplant
- 1 tomato diced fine
- 3 garlic cloves, diced fine
- 1 small onion, diced fine
- 1 tbs. sugar
- 4 spurts Tabasco
- salt
- black pepper
- parsley
- basil
- 3 tbs. lemon juice
- 1/3 cup olive oil
- Bake, grill, or boil for 15 - 17 minutes, whole eggplant, until soft.
- Let cool & drain.
- Peel.
- Cut up, shred.
- Combine all ingredients and mix well.
