Jenny's Meatballs - Lauren's friend, Jenny Hines
- 1 lb ground beef
- 1 cup bread crumbs
- ½ cup grated parmesan cheese
- 1 tablespoon parsley
- 2 finely chopped cloves garlic
- ½ cup water
- 2 eggs, beaten
- 1 ½ teaspoons salt
- 1 teaspoon pepper
- 1 cup chopped onions
- Mix all ingredients by hand - it's the only way!
- Form into balls (about 1 ½ inches in diameter)
- Cook in about ½ inch of olive oil over medium heat
- Turn once or twice until all sides are browned
