Lokshen Kugel
- 8 oz. can crushed pineapple
- 2 large eggs
- 4 tbs. oil
- ½ cup sugar
- 1 tsp. vanilla extract
- 1 tsp. almond extract
- 1 tsp. cinnamon
- 9 oz. medium broad noodles
- ½ cup matzo meal
- 1 tsp. salt
- 3/4 cup brown sugar
- shaker of mixed sugar & cinnamon
- Grease 8" square pan.
- Cook noodles (slightly undercook).
- Drain pineapple of all liquid.
- Mix sugar and egg. Add and mix flavorings, salt, spices, pineapple, and oil thoroughly.
- Add and mix cooked noodles.
- Add matzo meal. Mix thoroughly.
- Turn into greased pan.
- Sprinkle top lightly with shaker and some dry matzo meal.
- Bake for 1 hr at 375° (1 hr 5 min & 350° in glass).
- Let cool 10 minutes, loosen edges with back of knife and turn out.
