Matzo Brei - Fried Matzo w/egg
- 4 Sheets Matzo (not egg)
- 1 Jumbo or 2 medium eggs
- 1/3 cup milk
- butter
- Salt & Pepper
- Break matzo into small pieces and place into colander.
- Dampen with water (fairly wet) - sink sprayer is ideal for this.
- Mix eggs and milk well in large bowl. Add salt and pepper. Add matzo and toss to coat.
- Melt butter in frypan. Add matzo mixture and cook over medium heat, turning once with spatula until very lightly browned.
- Serve with cinnamon and sugar, sour cream, jams, jellies, etc.
