Potato Pudding
- 2 eggs
- 6 large potatoes
- 1 medium onion
- ½ cup matzo meal
- 4 tbs. corn oil
- salt & pepper
- spry or Crisco (or butter if you don't care that it's dairy)
- Preheat oven to 350° to 400°.
- Grease pan.
- Shred potatoes and onion together into bowl.
- Add eggs, oil, salt, pepper to taste and matzo meal.
- Mix thoroughly.
- Work quickly to keep color from browning. Don't mind liquid -- it will be absorbed in baking.
- Bake 1 hour more or less until browned.
