Salmon Croquettes
- 1 lb. Salmon (Can -- Alaskan Sockeye)
- 2 tsp. dehydrated onion (or raw)
- ½ tsp. salt
- pepper - hot as you like
- ¼ cup matzo meal
- 2 eggs
- 1 tbs. milk
- oil to cover fry pan to a skimpy ½"
- Beat eggs with milk.
- Drain salmon.
- Mix all ingredients, except oil.
- Shape all patties
- Fry in oil till brown, turn and brown.
