Shish Kebab
- 1 lb. boneless beef about 1" thick
- 1 small green pepper
- 1 tomato
- 1 onion
The Marinade:
- ½ tsp. allspice
- 1/8 tsp. pepper
- 1 ½ tsp. salt
- 1 tsp. lemon juice
- 1 very small onion chopped
- ½ small can tomato paste
- Cut beef into cubes, removing gristle. There will be from 16 to 24 pieces. Remember how many.
- Mix marinade and let beef stand in it for about 3 hours (2 out of refrigerator).
- Blanch onion after peeling. Cut and separate into same number of pieces as beef.
- Wash and cut green pepper into half as many pieces as beef.
- Wash and cut tomato into half as many pieces as beef.
- (Start rice now).
- Assemble shish kebabs (4 of them).
- Push skewered material together firmly, place on rack on broiler pan and cover with any extra marinade.
- Broil about 7 minutes on each side.
- Serve with rice (¾ cups uncooked).
