Pennè Pasta à la Gwen

  1. Melt butter in large skillet on medium high heat.
  2. Add diced tomatoes, juice, half & half, vodka, crushed red pepper. Simmer until thick sauce consistency (8 minutes)
  3. Season salt & pepper to taste.
  4. Heat oil in another skillet. Sauté mushrooms for 4 minutes over medium heat.
  5. Add sun dried tomatoes, artichokes and shallots.
  6. Add tomato mixture to this - cook for 5 minutes.
  7. Season to taste (again). Stir in basil.
  8. Cook penne al dente (reserving ½ cup liquid).
  9. Mix together.
  10. Add parmesan cheese & 2 tbs. basil.
  11. Serve.
