Gorgonzola-Pistachio Loaf

  1. Moisten two 18" cheese-cloth squares.
  2. Line 8" x 4" loaf pan, draping excess cloth over sides.
  3. Combine cream cheese, gorgonzola, and butter in large bowl and blend with spatula.
  4. Spread ⅓ of the cheese mixture into the prepared pan. Sprinkle with parsley.
  5. Cover with half of the remaining cheese mixture.
  6. Sprinkle with pistachios.
  7. Cover with remaining cheese mixture.
  8. Fold ends of cloth over and press down lightly.
  9. Refrigerate until firm, about 1 hour.
  10. Invert onto serving plate.
  11. Carefully remove cheesecloth.
  12. Garnish with sprigs and pistachios.
  13. Serve at room temperature.
